Ingredients

  • 2 ¼ tsp (7 g) active dry yeast
  • 1 tsp (4 g) white granulated sugar
  • 1 ¼ cups (300 ml) warm water
  • 1 ¼ tsp (6 g) salt
  • 3 cups (375 g) all-purpose flour
  • Red Food Coloring
  • ½ cup (120 ml) warm water
  • 1 tbsp (7 g) active dry yeast
  • ¾ cup (90 g) rice flour
  • 1 tbsp (12 g) white granulated sugar
  • 1 tbsp (15 ml) vegetable oil
  • ½ tsp (3 g) salt
  • Black Food Coloring


Instructions

  1. Begin by preparing the dough. Combine the heated water, active dry yeast, and granulated sugar in a bowl. Stir well and allow it to rest for 5 minutes to activate the yeast.
  2. After the resting period, incorporate the flour, salt, and red food coloring. Mix until everything is well blended and the color is distributed uniformly in the dough, which will be sticky at this point. Cover the bowl with a cloth and let it rise for 1 hour.
  3. Once the dough has expanded, pull the edges inward toward the center.
  4. Move the dough to a clean, floured surface and divide it into 7 equal parts. Shape each portion into a smooth ball by tucking the edges underneath until a small, round loaf forms. Place each on a baking sheet lined with parchment paper. Do this for all pieces.
  5. Cover the tray with plastic wrap and let the dough balls rise again for 30 minutes.
  6. While waiting, prepare the brimstone topping. Mix the black food coloring generously with the warm water to achieve a deep black color, then add the yeast and mix thoroughly. Allow this to sit for 5 minutes to activate the yeast.
  7. In a different bowl, place the rice flour. After 5 minutes, pour in the yeast mixture, followed by the sugar, vegetable oil, and salt. Whisk until a thick, slow-falling paste forms. Cover with a cloth and leave it for 15 minutes.
  8. Once both the dough and topping are ready, put a large spoonful of the black mixture on each red dough ball.
  9. With clean, dry hands, spread a thick layer of the black paste over each dough ball. Avoid spreading it too thinly to ensure cracking during baking. Allow the paste to adhere for an additional 15 minutes before baking.
  10. Preheat the oven to 460°F and bake the bread for 25 minutes. You’ll see lovely cracks in the black coating, revealing the red bread beneath.
  11. Take them out of the oven and let them cool for 5-10 minutes.
