Ingredients
- – Non-stick cooking spray
- – 4 garlic cloves, minced (20g)
- – 1 medium white or yellow onion, diced (150g)
- – 2 medium carrots, peeled and diced 1/4 inch (150g)
- – 2 celery ribs, diced 1/4 inch (100g)
- – 1 pound (450g) lean ground beef
- – 3 tablespoons (50g) tomato paste
- – 8 cups (1920 ml) (1.9 liters) chicken broth
- – 6 cups (1440 ml) (1.4 liters) shredded cabbage
- – 1 teaspoon (5 ml) basil
- – 1 teaspoon (5 ml) oregano
- – 1 small zucchini, chopped (150g)
- – Salt and pepper
Instructions
- Warm a large pot on medium heat and coat it with non-stick cooking spray or a drizzle of olive oil. Introduce the garlic, onions, carrots, and celery to the pot. Stir occasionally, cooking until the onions start to soften and become see-through at the edges, roughly 5 to 8 minutes.
- Increase the heat to medium high and incorporate the ground beef. Use a wooden spoon or spatula to crumble the beef as it cooks.
- When the beef loses its pink color, mix in the tomato paste and cook until the paste starts to adhere to the sides of the pan, about 2 to 3 minutes.
- Pour in the broth and add the cabbage, basil, and oregano. Bring the mixture to a gentle boil. Let it simmer for 10 minutes before including the zucchini. Continue cooking for another 5 minutes until all the vegetables are tender.
- Season with salt and pepper to your preference. Serve and enjoy!
