  • 1 tablespoon (15ml) vegetable oil
  • 1 pound (450g) lean ground chicken
  • 1 large onion, diced
  • 2 medium carrots, diced
  • 2-3 celery stalks, diced
  • 2 large garlic cloves, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 2-3 fresh sage leaves, sliced
  • 1/4 teaspoon red chili flakes
  • 3 medium potatoes, peeled and cut into 1-inch cubes
  • 5 cups (1.25l) chicken broth
  • 1 cup (250ml) low-fat milk
  • 1/3 cup (30g) grated cheese
  • Salt and freshly ground black pepper to taste


Instructions

  1. Pour the vegetable oil into a large pot or Dutch oven and warm it over medium heat, then sauté the beef strips for 2-3 minutes until they begin to crisp.
  2. Introduce the diced onion, carrots, and celery, cooking them for 8-10 minutes until they become soft.
  3. Add the lean ground chicken, stirring and breaking it apart with your spoon, and cook for 4-5 minutes until it loses its pink color.
  4. Mix in the minced garlic, chopped rosemary and thyme, sliced sage, and red chili flakes, cooking for an additional minute until the aromas are released.
  5. Incorporate the cubed potatoes and chicken broth, bringing the mixture to a boil before reducing the heat to medium-low; let it simmer for 20 minutes or until the potatoes are easily pierced with a fork.
  6. Blend in the low-fat milk and grated cheese, stirring until well combined.
  7. Taste and adjust the seasoning with salt and freshly ground black pepper, then serve the soup hot, garnished with extra grated cheese if desired.
