  • – 1.5 cups (300g) brown rice, cooked
  • – 1 tablespoon Italian seasoning
  • – 2 teaspoons onion powder
  • – 1 teaspoon garlic powder
  • – 16 ounces (450g) tomato sauce
  • – 1/2 cup grated Parmesan cheese
  • – 1.5 cups (150g) shredded Cheddar cheese (divided)


Instructions

  1. Set your oven temperature to 350°F and lightly coat a 9×9 inch baking dish with cooking spray, then place it aside.
  2. Rinse the peppers, slice off their tops, and discard any seeds and white membranes inside.
  3. Fill a large pot with water and bring it to a rolling boil, ensuring there’s enough water to fully immerse the peppers.
  4. Submerge the peppers in the boiling water, pressing them down until fully covered, and let them cook for 5 minutes, then drain.
  5. In a medium saucepan, combine the ground beef with the chopped onion and minced garlic, cooking over medium heat until the beef reaches an internal temperature of 165°F.
  6. Remove any leftover liquid or fat from the beef mixture and set it aside.
  7. In a large mixing bowl, thoroughly blend the cooked beef, brown rice, Italian seasoning, onion powder, garlic powder, tomato sauce, and Parmesan cheese.
  8. Add 1 cup of shredded Cheddar cheese to this mixture, stirring until evenly incorporated.
  9. Arrange the partially cooked peppers upright in the prepared baking dish, leaning them against each other if necessary to keep them standing.
  10. Using a spoon, fill each pepper completely with the stuffing mixture, ensuring the filling reaches all corners.
  11. Sprinkle the remaining Cheddar cheese over the stuffed peppers.
  12. Place in the preheated oven to bake for 20 minutes.
