Ingredients

- – 1 tbsp (15 ml) olive oil
- – 2 cups (480 ml) zucchini, cubed
- – 1 cup (240 ml) broccoli florets
- – 3/4 cup (180 ml) red bell pepper, chopped
- – 1/2 cup (120 ml) red onion, chopped
- – 3 cloves garlic, minced
- – 2 tbsp (30 ml) tomato paste
- – 2 tbsp (30 ml) soy sauce or coconut aminos
- – salt and pepper, to taste
- – fresh parsley
Instructions
- Warm up the olive oil in a large pan. Introduce the ground beef and let it cook for about 8-10 minutes, then incorporate the red onion and minced garlic. Keep cooking the beef until it’s no longer pink.
- While the meat is cooking, you can dice the vegetables to save time!
- Add the cubed zucchini, broccoli florets, and chopped red bell pepper to the skillet and mix thoroughly. Season with salt and pepper, then pour in the soy sauce and tomato paste, stirring to blend. Cover the pan and let it simmer for an additional 6-8 minutes until the vegetables are tender and the sauce has thickened.
