Description

A hearty bowl featuring robust ground beef, sweet roasted sweet potatoes, and a drizzle of hot honey, perfect for bringing family and friends together.


Ingredients

  • 1 lb lean ground beef (93%)
  • 2 medium sweet potatoes, peeled and diced
  • 1 sliced avocado
  • 1 cup cottage cheese
  • 1 diced yellow onion
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp)
  • 2 tbsp hot honey
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp ground cinnamon
  • Salt and pepper, to taste
  • Optional: chopped cilantro, red pepper flakes, lime juice


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 40-45 minutes, stirring halfway.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté diced onion until soft, about 3-4 minutes.
  4. Add ground beef to the skillet. Cook for 6-8 minutes, breaking it apart. Stir in taco seasoning, salt, and pepper. Cook until browned.
  5. Assemble bowls: sweet potatoes on the bottom, then ground beef, avocado slices, and a scoop of cottage cheese.
  6. Drizzle hot honey generously over each bowl. Add optional garnishes if desired.
  7. Serve immediately and enjoy while warm.

Notes

For an interactive dining experience, serve extras like salsa or additional hot honey on the side.
