Description

Delicious grilled zucchini strips marinated with olive oil, honey, and balsamic vinegar, topped with Parmesan cheese and fresh basil.


Ingredients

  • 1 pound zucchini, cut into ½ inch strips
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon salt
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 2 tablespoons freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh basil


Instructions

  1. In a large bowl, combine olive oil, honey, balsamic vinegar, Italian seasoning, garlic powder, and salt.
  2. Add zucchini strips to the bowl, tossing gently until evenly coated.
  3. Preheat grill to 450°F.
  4. Place coated zucchini strips on the grill and reserve any remaining marinade.
  5. Grill for about 10 minutes on one side until charred. Flip each strip and grill for an additional 3-4 minutes.
  6. Transfer zucchini to a platter, drizzle with reserved marinade, sprinkle with Parmesan cheese and fresh basil before serving.

Notes

For best results, consider marinating the zucchini for at least 30 minutes before grilling. Use firm zucchini to avoid sogginess.
