Ingredients
- 1 medium zucchini
- 1 medium yellow squash
- 1 large red bell pepper
- 1 large yellow bell pepper
- 1 small eggplant
- 1 bunch of asparagus
- 3 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons balsamic vinegar
Instructions
- Preheat the grill to medium-high heat.
- Slice vegetables into even pieces and place in a large bowl.
- Drizzle olive oil over vegetables and season with salt, pepper, oregano, and garlic powder. Toss to coat evenly.
- Grill vegetables for about 4-5 minutes on each side until tender with grill marks.
- Remove from heat, drizzle with balsamic vinegar, toss gently, and serve warm.
Notes
For an added crunch, sprinkle chopped walnuts or toasted pine nuts on the veggies after grilling. Marinating the vegetables before grilling can enhance their flavor.
