A colorful medley of grilled vegetables that celebrates fresh produce and simple preparation.
Ingredients
- 1 medium zucchini
- 1 medium yellow squash
- 1 large red bell pepper
- 1 large yellow bell pepper
- 1 small eggplant
- 1 bunch of asparagus
- 3 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons balsamic vinegar
Instructions
- Preheat the grill to medium-high heat.
- Slice vegetables into even pieces and place in a large bowl.
- Drizzle olive oil over vegetables and season with salt and pepper. Toss to coat evenly.
- Grill vegetables for about 4-5 minutes on each side until tender with grill marks.
- Remove from heat, drizzle with balsamic vinegar, toss gently, and serve warm.
Notes
For best results, do not overcrowd the grill and experiment with different herbs and spices.
