Description

A vibrant grilled shrimp bowl featuring marinated shrimp, fresh corn salsa, creamy sauce, and avocado, perfect for summer gatherings.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 cups cooked rice (white or brown)
  • 1 cup fresh corn kernels (or canned, drained)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon hot sauce (optional)
  • 1 ripe avocado, sliced
  • Lime wedges
  • Fresh cilantro for garnish


Instructions

  1. Marinate the shrimp in olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper for at least 15 minutes.
  2. Prepare the corn salsa by mixing corn, cherry tomatoes, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl.
  3. For the creamy sauce, whisk together Greek yogurt, mayonnaise, lime juice, hot sauce, salt, and pepper until smooth.
  4. Preheat the grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers and grill each side for 2-3 minutes or until cooked through.
  5. Assemble the bowls with rice, grilled shrimp, corn salsa, and avocado slices. Drizzle with creamy sauce and garnish with lime wedges and fresh cilantro.
