Ingredients
- 1 lb shrimp
- 2 tbsp olive oil
- 1 avocado, sliced
- 1 cup corn (fresh or canned)
- 1 small red onion, diced
- 1 cup cherry tomatoes, halved
- ¼ cup cilantro, chopped
- Juice of 1 lime
- 2 cloves garlic, minced
- ½ cup sour cream or Greek yogurt
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, toss shrimp with olive oil, salt, and pepper. Grill shrimp for 2-3 minutes on each side until cooked through.
