Ingredients
- 1 medium zucchini (about 200g), halved lengthwise
- 2 red, orange and/or yellow bell peppers (about 300g), trimmed, halved and seeded
- 1 medium red onion (about 150g), cut into 1-inch wedges
- 1 tablespoon vegetable oil (15 ml)
- 1/2 teaspoon (3 ml) salt, divided
- 1/2 teaspoon (3 ml) ground pepper
- 1 1/4 pounds beef fillet (about 570g), cut into 4 portions
- 1/4 cup thinly sliced fresh basil (15g)
- 1 lemon, cut into 4 wedges
Instructions
- Heat the grill to a medium-high temperature.
- Coat the zucchini, bell peppers, and red onion with oil, then season with half of the salt. Season the beef portions with pepper and the remaining salt.
- Place the seasoned vegetables and beef portions on the grill, ensuring the beef is positioned with the skin side facing down. Grill the veggies, flipping them once or twice, until they are just tender and have grill marks, about 4 to 6 minutes on each side. Cook the beef without flipping until it can be easily flaked with a fork, approximately 8 to 10 minutes.
- Once the vegetables are cool enough to manage, chop them roughly and combine them in a large bowl. Optionally, remove the skin from the beef portions and serve them alongside the vegetables. Top each serving with fresh basil and accompany it with a lemon wedge.
Notes
- Enhance the flavors by marinating the beef fillet in your favorite marinade for at least 30 minutes before grilling.
- For a smokier taste, consider using a charcoal grill instead of a gas grill.
