A delightful combination of grilled vegetables and savory cheeses, these quesadillas are perfect for any casual gathering or family dinner.
Ingredients
- 4 large whole wheat tortillas
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 8 ounces of fresh spinach
- 1 cup cherry tomatoes, halved
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cloves garlic, minced
Instructions
- Preheat the grill to medium heat.
- In a large bowl, combine zucchini, red bell pepper, and red onion with olive oil, salt, pepper, oregano, and basil.
- Place the seasoned vegetables on the grill and grill for 5-7 minutes until tender.
- In a skillet, sauté garlic in olive oil until fragrant, then add spinach and cook until wilted.
- On half of each tortilla, layer grilled vegetables, spinach, cherry tomatoes, feta cheese, and mozzarella cheese. Fold tortillas in half.
- Return quesadillas to the grill and cook for 3-4 minutes on each side until golden brown and cheese is melted.
- Remove from grill, let cool slightly, and cut into wedges. Serve warm.
Notes
Serve with salsa or guacamole for an added layer of flavor. Experiment with different vegetables or spices to customize your quesadilla.
