Ingredients
- 4 Chicken Thighs
- 1/2 Cup Fresh Parsley, Chopped
- 1/4 Cup Olive Oil
- 2 Tablespoons Red Wine Vinegar
- 3 Garlic Cloves, Minced
- 1 Teaspoon Dried Oregano
- 1/2 Teaspoon Red Pepper Flakes
- Salt and Pepper to Taste
Instructions
- In a bowl, combine parsley, olive oil, red wine vinegar, garlic, oregano, red pepper flakes, salt, and pepper to make the chimichurri sauce.
- Reserve half of the chimichurri sauce for serving.
- Marinate the chicken thighs in the remaining chimichurri sauce for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken thighs for about 6-7 minutes on each side or until fully cooked.
- Serve the grilled chicken thighs with the reserved chimichurri sauce on top.
Notes
For a kick, increase the amount of red pepper flakes or add fresh lemon juice for a tangy twist.
