Ingredients
- – 1 pound (454 g) boneless skinless chicken breast, cut into 1 inch (2.5 cm) pieces
- – 1/4 cup (60 ml) olive oil
- – 1/3 cup (80 ml) soy sauce
- – 1/4 cup (60 ml) maple syrup
- – 1 teaspoon (5 ml) minced garlic
- – salt and pepper to taste
- – 1 red bell pepper, cut into 1 inch (2.5 cm) pieces
- – 1 yellow bell pepper, cut into 1 inch (2.5 cm) pieces
- – 2 small zucchinis, cut into 1 inch (2.5 cm) slices
- – 1 red onion, cut into 1 inch (2.5 cm) pieces
- – 1 tablespoon (15 ml) chopped parsley
Instructions
- In a large bowl, combine the olive oil, soy sauce, maple syrup, minced garlic, and a pinch of salt and pepper.
- Stir everything together until well mixed.
- Add the pieces of chicken, red and yellow bell peppers, zucchinis, and red onion into the bowl. Turn them over in the marinade until fully coated.
- Cover the bowl and place it in the refrigerator for a minimum of 1 hour, or up to 8 hours if you have more time.
- Immerse wooden skewers in cold water for at least 30 minutes. Meanwhile, heat the grill or a grill pan to medium-high.
- Carefully thread the marinated chicken and veggies onto the soaked skewers.
- Grill for 5-7 minutes per side, ensuring the chicken is thoroughly cooked.
- Top with chopped parsley before serving.
