Ingredients

  • – 1 pound (454 g) boneless skinless chicken breast, cut into 1 inch (2.5 cm) pieces
  • – 1/4 cup (60 ml) olive oil
  • – 1/3 cup (80 ml) soy sauce
  • – 1/4 cup (60 ml) maple syrup
  • – 1 teaspoon (5 ml) minced garlic
  • – salt and pepper to taste
  • – 1 red bell pepper, cut into 1 inch (2.5 cm) pieces
  • – 1 yellow bell pepper, cut into 1 inch (2.5 cm) pieces
  • – 2 small zucchinis, cut into 1 inch (2.5 cm) slices
  • – 1 red onion, cut into 1 inch (2.5 cm) pieces
  • – 1 tablespoon (15 ml) chopped parsley


Instructions

  1. In a large bowl, combine the olive oil, soy sauce, maple syrup, minced garlic, and a pinch of salt and pepper.
  2. Stir everything together until well mixed.
  3. Add the pieces of chicken, red and yellow bell peppers, zucchinis, and red onion into the bowl. Turn them over in the marinade until fully coated.
  4. Cover the bowl and place it in the refrigerator for a minimum of 1 hour, or up to 8 hours if you have more time.
  5. Immerse wooden skewers in cold water for at least 30 minutes. Meanwhile, heat the grill or a grill pan to medium-high.
  6. Carefully thread the marinated chicken and veggies onto the soaked skewers.
  7. Grill for 5-7 minutes per side, ensuring the chicken is thoroughly cooked.
  8. Top with chopped parsley before serving.
