Ingredients
- – 2 pounds (900g) boneless, skinless chicken breasts, cut into 1 ½ to 2 inch pieces
- – 1/3 cup (80ml) vegetable oil
- – 1/4 cup (60ml) apple juice
- – 2 Tablespoons (30ml) fresh lemon juice
- – 4 cloves garlic, minced
- – 2 Tablespoons (30 ml) Greek seasoning (link to recipe in notes section below)
- – 2 teaspoons (10 ml) paprika
Instructions
- Create the marinade and soak the chicken. In a spacious mixing bowl or a large resealable plastic bag, combine vegetable oil, apple juice, lemon juice, minced garlic, Greek seasoning, and paprika. Mix well and add the chicken pieces, ensuring they are well coated. Seal and chill in the refrigerator for 4-8 hours.
- Skewer the chicken. Take the chicken out of the marinade and slide onto metal skewers, leaving small gaps between each piece for uniform cooking. If using wooden skewers, ensure they have been submerged in water for at least 30 minutes beforehand.
- Prepare the grill. Adjust your grill to medium-high heat, approximately 375 degrees F, for direct grilling.
- Cook the chicken. Position the skewers over the direct heat and grill each side for 4-5 minutes with the cover closed, until the internal temperature of the chicken reaches 160 degrees F.
- Let the chicken rest. Move the skewers to a cutting board, loosely cover with foil, and allow them to rest for 5-10 minutes. During this time, the chicken will continue to cook and reach 165 degrees F.
- Serve and savor! If preferred, take the chicken off the skewers and serve with warm pita bread, tzatziki sauce, cucumbers, tomatoes, and red onion.
