Description
A comforting dish featuring juicy grilled chicken, crisp-tender broccoli, and fluffy grains, all drizzled with a rich creamy garlic sauce.
Ingredients
- 2 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 1 cup cooked grains (like rice, quinoa, or couscous)
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1 tablespoon lemon juice
- Optional: Fresh parsley or chives for garnish
Instructions
- Season the chicken breasts with olive oil, salt, pepper, and any optional spices you prefer. Grill over medium-high heat, flipping once, until cooked through and lightly charred, reaching an internal temperature of 165°F.
- Toss the broccoli florets with olive oil, lemon juice, and a pinch of salt. Roast in a preheated oven at 400°F for 15–20 minutes until they are crisp-tender.
- Prepare the grains according to the package instructions. Fluff them with a fork and keep them warm.
- In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant. Stir in the heavy cream, season with salt and pepper, and let it simmer until it thickens.
- In serving bowls, layer the cooked grains, sliced grilled chicken, and roasted broccoli. Drizzle with the creamy garlic sauce and garnish with fresh herbs like parsley or chives.
Notes
Marinating chicken for at least 30 minutes enhances flavor. Consider adding herbs or spices for added depth.
