Description

Ingredients

  • 2 pounds (907 g) boneless chicken breasts
  • Kosher salt, to taste
  • Fresh cracked black pepper, to taste
  • 1/2 teaspoon (2.5 ml) paprika
  • 4 tablespoon s (60 g) vegetable oil, divided
  • 4-5 cloves (4-5 cloves) garlic, minced
  • 5 ounce s (298 g) (1 can) Condensed Cream of Chicken Soup, or more if needed
  • 1 cup (240 ml) water
  • 2 to 3 cup (600 ml) s (480-710 ml) chopped broccoli
  • 1 teaspoon (5 ml) chopped fresh parsley
  • Lemon wedges, optional


Instructions

  1. Sprinkle the chicken with kosher salt, freshly cracked black pepper, and paprika. Put it aside for now.
  2. Warm up a large skillet over medium-high heat. Pour in half of the vegetable oil (2 tablespoons) and heat it up. Place the chicken in the skillet and cook each side for about 5 minutes or until it turns golden brown. Take the chicken out of the skillet, cover it, and keep it warm.
  3. In the same skillet, pour in the remaining 2 tablespoons of vegetable oil. Sauté the minced garlic until it becomes lightly golden and aromatic. Stir in the condensed cream of chicken soup and a cup of water. Allow the sauce to heat until it bubbles, then reduce the heat to low.
  4. Return the chicken and add the chopped broccoli to the skillet, then cover with a lid. Let it cook for approximately 10 more minutes or until the chicken is fully cooked. For crunchier broccoli, introduce it to the skillet once the chicken is nearly done.
  5. Serve alongside rice or pasta, and accompany with lemon wedges if desired. Top with freshly chopped parsley for garnish.
