Ingredients
- 2 pounds (907 g) boneless chicken breasts
- Kosher salt, to taste
- Fresh cracked black pepper, to taste
- 1/2 teaspoon (2.5 ml) paprika
- 4 tablespoon s (60 g) vegetable oil, divided
- 4-5 cloves (4-5 cloves) garlic, minced
- 5 ounce s (298 g) (1 can) Condensed Cream of Chicken Soup, or more if needed
- 1 cup (240 ml) water
- 2 to 3 cup (600 ml) s (480-710 ml) chopped broccoli
- 1 teaspoon (5 ml) chopped fresh parsley
- Lemon wedges, optional
Instructions
- Sprinkle the chicken with kosher salt, freshly cracked black pepper, and paprika. Put it aside for now.
- Warm up a large skillet over medium-high heat. Pour in half of the vegetable oil (2 tablespoons) and heat it up. Place the chicken in the skillet and cook each side for about 5 minutes or until it turns golden brown. Take the chicken out of the skillet, cover it, and keep it warm.
- In the same skillet, pour in the remaining 2 tablespoons of vegetable oil. Sauté the minced garlic until it becomes lightly golden and aromatic. Stir in the condensed cream of chicken soup and a cup of water. Allow the sauce to heat until it bubbles, then reduce the heat to low.
- Return the chicken and add the chopped broccoli to the skillet, then cover with a lid. Let it cook for approximately 10 more minutes or until the chicken is fully cooked. For crunchier broccoli, introduce it to the skillet once the chicken is nearly done.
- Serve alongside rice or pasta, and accompany with lemon wedges if desired. Top with freshly chopped parsley for garnish.
