Ingredients
- 6 corn tortillas
- 2 cups salsa verde
- 2 tablespoons vegetable oil
- 4 eggs (optional)
- Sour cream (for serving)
- Feta cheese (for serving)
- Fresh cilantro (for garnish)
- Onion (for garnish)
Instructions
- Cut the corn tortillas into strips or triangles.
- Heat vegetable oil in a skillet over medium heat and lightly fry the tortillas until crisp. Remove and drain on paper towels.
- Pour in the salsa verde and let it warm up.
- Add the fried tortillas to the salsa and gently stir to coat.
- Cook for a few minutes until the tortillas soften slightly.
- If desired, fry the eggs in the skillet.
- Serve the chilaquiles hot, topped with a fried egg, sour cream, feta cheese, fresh cilantro, and onion.
Notes
For the crispiest tortillas, fry in batches and make sure the oil is hot enough.
