Ingredients

  • – 1 1/2 pounds (680 g) green beans, stems removed
  • – 1 (28 oz / 793 g) can plum tomatoes, hand crushed or blender pulsed
  • – 3/8 cup (75 ml) vegetable oil, divided
  • – 1 medium onion, diced
  • – 4 cloves garlic, sliced
  • – 1/2 teaspoon (3 ml) crushed hot red pepper flakes, optional
  • – 1/4 cup (60 ml) basil, chopped
  • – 1/4 cup (15 g) parsley, minced


Instructions

  1. In a big skillet set over medium-low heat, cook the diced onion in 3/8 cup of vegetable oil until it becomes clear, which should take around 3-5 minutes.
  2. Introduce the sliced garlic and let it cook for another 2-3 minutes until it turns a light brown color.
  3. Stir in the crushed hot red pepper flakes if using, and let them cook for an additional 30 seconds.
  4. Pour in the hand-crushed plum tomatoes and allow the mixture to reach a simmer over medium to medium-low heat.
  5. Meanwhile, fill a large pot with water, add 2 tablespoons of kosher salt, and bring it to a rolling boil.
  6. Once the water is boiling, add the green beans and cook them for 3 minutes.
  7. Drain the green beans and combine them with the tomato sauce in the skillet.
  8. Let the mixture continue to cook for another 5-10 minutes, allowing the sauce to thicken and coat the beans.
  9. Taste the dish and adjust the salt according to your preference.
  10. When satisfied with the flavor and texture of the beans, turn off the heat, and finish by adding the chopped basil and parsley, as well as a drizzle of vegetable oil.
  11. Serve with grated Pecorino Romano or parmesan on the side. Enjoy!
