Description

A healthy and indulgent frozen treat made from Greek yogurt, peanut butter, and topped with dark chocolate.


Ingredients

  • 1 cup plain Greek yogurt (whole milk/full fat)
  • 3/4 cup peanut butter
  • 1/4 cup vanilla protein powder
  • 1-2 tablespoons maple syrup or honey
  • 1/4 teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • Flaked sea salt (optional)


Instructions

  1. In a mixing bowl, stir together the Greek yogurt, peanut butter, vanilla protein powder, maple syrup or honey, and vanilla extract until smooth and creamy.
  2. Spread the mixture onto a parchment-lined quarter sheet pan, ensuring an even layer of 1/4 inch to 1/2 inch thick.
  3. Melt the dark chocolate chips in the microwave in 30-second increments, stirring in between until silky.
  4. Pour and spread the melted chocolate evenly over the yogurt mixture.
  5. Freeze for at least 2-3 hours until solid.
  6. If desired, sprinkle with flaked sea salt, then cut or break into pieces to serve.

Notes

Experiment with different nut butters or add toppings like chopped nuts or dried fruits for variations.
