Ingredients
- 2 cup (480 ml) s penne pasta
- 66666668653488 cup (160 ml) extra-virgin olive oil
- 25 cup (60 ml) apple cider vinegar
- 2 cloves garlic, crushed
- 1 tablespoon (15 ml) lemon juice
- 2 teaspoon (10 ml) s dried oregano
- Salt and pepper to taste
- 10 cherry tomatoes, halved
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- 5 cucumber, sliced
- 5 cup (120 ml) sliced black olives
- 5 cup (120 ml) crumbled feta cheese
Instructions
- Collect all the necessary items.
- Fill a big pot with water, add a pinch of salt, and bring it to a boil. Add the penne to the boiling water, let it cook uncovered, stirring now and then, until it is al dente, roughly 10 minutes; rinse with cold water and let it drain thoroughly.
- In a bowl, mix together the olive oil, vinegar, crushed garlic, lemon juice, oregano, salt, and pepper; set this mixture aside.
- In a large bowl, combine the cooked pasta with the halved tomatoes, chopped green and red peppers, onion, cucumber slices, black olives, and crumbled feta cheese. Pour the prepared vinaigrette over this mixture and mix everything well.
