Ingredients

  • – 2.2 lbs. (1 kg) potatoes, peeled and cut into small cubes
  • – 1 red capsicum bell pepper, cut into cubes
  • – 3 tablespoons (45 ml) olive oil
  • – 1 teaspoon (5 ml) salt
  • – Juice of 1/4 lemon
  • – 1 teaspoon (5 ml) garlic powder
  • – 1 teaspoon (5 ml) onion powder
  • – 1 teaspoon (5 ml) paprika
  • – 1 teaspoon (5 ml) oregano
  • – 1/4 teaspoon (1 ml) cinnamon
  • – 1/2 teaspoon (3 ml) ground pepper
  • – 2 oz. (60 g) feta cheese, smooth or Greek
  • – 2 tablespoons (30 ml) chopped parsley
  • – Juice of 1/4 lemon


Instructions

  1. Set your oven to a temperature of 200°C (400°F) to preheat.
  2. In a large bowl, combine the potato cubes and diced red bell pepper with a teaspoon of salt, two tablespoons of olive oil, and the juice from a quarter of a lemon.
  3. Coat a large, flat baking tray with an extra tablespoon of olive oil. Arrange the potato and pepper mixture across the tray and place it on the middle rack of the oven for 25 minutes.
  4. Prepare your spice blend and herbs. After the initial 25 minutes, remove the tray and sprinkle the spice mix evenly over the potatoes. Use a spatula to mix them thoroughly, ensuring the seasoning covers everything.
  5. Return the tray to the oven for another 10-15 minutes until the potatoes are golden and crisp on the edges but tender inside.
  6. To finish, add a final splash of lemon juice, crumble the feta over the top, and sprinkle with chopped parsley.
