Description

A delightful and zesty side dish featuring fluffy rice infused with lemon, garlic, and fresh herbs.


Ingredients

  • 1 cup rice
  • 2 cups vegetable or chicken broth
  • 1 lemon (juice and zest)
  • 2 tablespoons olive oil
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or dill)


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, heat the olive oil over medium heat. Add minced garlic and sauté for a minute until fragrant.
  3. Add the rice and stir to coat in the oil.
  4. Pour in the broth, lemon juice, and zest. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 18-20 minutes or until rice is fluffy and liquid is absorbed.
  6. Fluff the rice with a fork and mix in chopped fresh herbs, salt, and pepper to taste.
