Ingredients
- 1 cup rice
- 2 cups vegetable or chicken broth
- 1 lemon (juice and zest)
- 2 tablespoons olive oil
- 2 garlic cloves (minced)
- Salt and pepper to taste
- Fresh herbs (such as parsley or dill)
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat the olive oil over medium heat. Add minced garlic and sauté for a minute until fragrant.
- Add the rice and stir to coat in the oil.
- Pour in the broth, lemon juice, and zest. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 18-20 minutes or until rice is fluffy and liquid is absorbed.
- Fluff the rice with a fork and mix in chopped fresh herbs, salt, and pepper to taste.
- Serve warm alongside grilled meats or veggies.
Notes
