Ingredients
- 1 (8 ounce (227 g)) container fat-free plain yogurt
- 33333334326744 cup (80 ml) crumbled feta cheese with basil and sun-dried tomatoes
- 5 teaspoon (3 ml) lemon zest
- 2 tablespoon (30 ml) s fresh lemon juice
- 2 teaspoon (10 ml) s dried oregano
- 5 teaspoon (3 ml) salt
- 25 teaspoon (1 ml) ground black pepper
- 25 teaspoon (1 ml) crushed dried rosemary
- 1 pound (454 g) skinless, boneless chicken breast halves – cut into 1 inch pieces
- 1 large red onion, cut into wedges
- 1 large green bell pepper, cut into 1 1/2 inch pieces
Instructions
- In a large shallow dish, combine the yogurt, crumbled feta, lemon zest, lemon juice, oregano, salt, black pepper, and rosemary. Add the chicken pieces, making sure they are well-coated with the mixture. Cover the dish and let it sit in the fridge for 3 hours to marinate.
- Heat up an outdoor grill to a high temperature.
- Place the chicken, red onion wedges, and green bell pepper pieces on skewers, alternating them. Dispose of the leftover yogurt mixture.
- Cook the skewers on the hot grill until the chicken is fully cooked and the juices run clear.
