Ingredients

  • 1 (8 ounce (227 g)) container fat-free plain yogurt
  • 33333334326744 cup (80 ml) crumbled feta cheese with basil and sun-dried tomatoes
  • 5 teaspoon (3 ml) lemon zest
  • 2 tablespoon (30 ml) s fresh lemon juice
  • 2 teaspoon (10 ml) s dried oregano
  • 5 teaspoon (3 ml) salt
  • 25 teaspoon (1 ml) ground black pepper
  • 25 teaspoon (1 ml) crushed dried rosemary
  • 1 pound (454 g) skinless, boneless chicken breast halves – cut into 1 inch pieces
  • 1 large red onion, cut into wedges
  • 1 large green bell pepper, cut into 1 1/2 inch pieces


Instructions

  1. In a large shallow dish, combine the yogurt, crumbled feta, lemon zest, lemon juice, oregano, salt, black pepper, and rosemary. Add the chicken pieces, making sure they are well-coated with the mixture. Cover the dish and let it sit in the fridge for 3 hours to marinate.
  2. Heat up an outdoor grill to a high temperature.
  3. Place the chicken, red onion wedges, and green bell pepper pieces on skewers, alternating them. Dispose of the leftover yogurt mixture.
  4. Cook the skewers on the hot grill until the chicken is fully cooked and the juices run clear.
