Ingredients

  • 4 boneless skinless chicken breasts
  • 1 Tablespoon (15 ml) lemon zest
  • 1/4 cup (60 ml) fresh squeezed lemon juice
  • 1/4 cup (60 ml) extra virgin olive oil
  • 3 cloves of garlic, minced
  • 1 Tablespoon (15 ml) chopped fresh oregano
  • 1 cup (240 ml) crumbled feta cheese
  • Salt & pepper


Instructions

  1. In a large bowl, combine the chicken breasts with lemon zest, lemon juice, olive oil, minced garlic, and chopped oregano. Season with salt and pepper (I used about 1-2 teaspoons of kosher salt and plenty of freshly ground pepper).
  2. Stir thoroughly to ensure the chicken is well-coated and, if possible, refrigerate for 30 minutes to marinate. If you’re short on time, you can skip this step; the chicken will still be delicious.
  3. Preheat your oven to 350 degrees and prepare a baking dish that can accommodate four chicken breasts.
  4. Arrange the marinated chicken in the baking dish, pouring the marinade over the top.
  5. Sprinkle crumbled feta cheese generously over each chicken breast.
  6. Cover the dish with aluminum foil and bake for 30 minutes. Afterward, remove the foil and continue baking for another 15 minutes to allow the feta cheese to brown and the chicken to cook through.

Notes

  • Sprinkle extra fresh oregano and lemon zest on the chicken before baking for enhanced flavor.
  • Check the chicken’s internal temperature with a meat thermometer to ensure it reaches 165°F for safe consumption.
  • Garnish with a squeeze of fresh lemon juice and chopped parsley before serving for a touch of freshness.
