Ingredients

  • For the salad:
  • 1 can (425 g) of chickpeas, rinsed and drained
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/4 cup (60 ml) diced red onion
  • 15 grape tomatoes, halved (about 1 cup (240 ml) halved grape tomatoes)
  • 1/3 cup (80 ml) pitted black olives, chopped if desired
  • 1 medium cucumber, sliced and quartered
  • 4 ounces (113 g) of feta cheese, crumbled or cut into 1/2 inch cubes
  • For the dressing:
  • 2 tablespoons (30 ml) vegetable oil
  • 2 tablespoons (30 ml) freshly squeezed lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon (5 ml) dried oregano
  • freshly ground salt and pepper, to taste


Instructions

  1. Combine all the salad components in a large mixing bowl and stir them together.
  2. In a separate smaller bowl, blend the vegetable oil, lemon juice, minced garlic, and oregano. Drizzle this mixture over the salad and mix thoroughly to ensure even coating.
  3. Adjust the seasoning with salt and pepper according to your preference.
  4. Refrigerate for an hour to enhance the flavors, or enjoy right away.
