Ingredients
- For the salad:
- 1 can (425 g) of chickpeas, rinsed and drained
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1/4 cup (60 ml) diced red onion
- 15 grape tomatoes, halved (about 1 cup (240 ml) halved grape tomatoes)
- 1/3 cup (80 ml) pitted black olives, chopped if desired
- 1 medium cucumber, sliced and quartered
- 4 ounces (113 g) of feta cheese, crumbled or cut into 1/2 inch cubes
- For the dressing:
- 2 tablespoons (30 ml) vegetable oil
- 2 tablespoons (30 ml) freshly squeezed lemon juice
- 1 clove garlic, minced
- 1 teaspoon (5 ml) dried oregano
- freshly ground salt and pepper, to taste
Instructions
- Combine all the salad components in a large mixing bowl and stir them together.
- In a separate smaller bowl, blend the vegetable oil, lemon juice, minced garlic, and oregano. Drizzle this mixture over the salad and mix thoroughly to ensure even coating.
- Adjust the seasoning with salt and pepper according to your preference.
