Ingredients
- 4 (227 g) boneless, skinless chicken breasts
- 60 ml apple cider vinegar
- 2 tsp (10 ml) sea salt
- 1 tsp (5 ml) freshly ground black pepper
- 1/2 tsp (3 ml) dried thyme
- 1/2 tsp (3 ml) dried oregano
- 1/2 tsp (3 ml) dried rosemary
- 1/2 tsp (3 ml) garlic powder
- 1/4 tsp (1 ml) paprika
- 60 ml vegetable oil
- 240 ml full-fat Greek yogurt
- 8 oz (227 g) tofu feta cheese
- 1 tbsp (15 ml) chopped fresh mint
- 1 tsp (5 ml) finely crushed garlic, or to taste
- 1 tsp (5 ml) lemon zest
- 2 tbsp (30 ml) chopped Italian parsley
Instructions
- Collect all necessary components.
- Slice each chicken breast into two along its length.
- Combine the vinegar, sea salt, ground black pepper, thyme, oregano, rosemary, garlic powder, and paprika in a large ceramic or glass mixing bowl. Add the chicken pieces and mix well to ensure they are evenly coated. Pour in the vegetable oil and mix again. Cover the bowl with plastic wrap and let it marinate in the fridge for a period between 1 and 12 hours, ideally 2 to 3 hours.
- In a different bowl, place the Greek yogurt and crumble the tofu feta into it. Add the chopped mint, crushed garlic, and lemon zest. Use an electric mixer or whisk to blend until the mixture becomes airy and smooth. Taste and modify the seasoning if needed. Cover with plastic wrap and refrigerate until required.
- Prepare an outdoor charcoal grill, ensuring the coals are white and very hot, and lightly oil the grill grate.
- Grill the chicken on the hot coals, cooking each side for about 4 minutes. Continue to flip and cook until the chicken is no longer pink inside and an instant-read thermometer shows at least 150 degrees F (65 degrees C). Let the chicken rest off the heat for around 5 minutes.
- Spread the whipped feta mixture on a serving dish and place the grilled chicken on top.
- Garnish the chicken and feta mixture with parsley and the remaining mint.

- For a richer feta mixture, opt for full-fat Greek yogurt.
- Adjust the amount of garlic and lemon zest to suit your taste.
- Allow the chicken to marinate for a minimum of 2 hours to enhance the flavors.
