Ingredients
- 2 Chicken breasts
- 2 tablespoons Olive oil
- 2 cloves Garlic, minced
- Juice of 1 Lemon
- Salt, to taste
- Black Pepper, to taste
- 1 Cucumber, diced
- 2 Tomatoes, diced
- 1 Red onion, sliced
- 1/2 cup Feta cheese, crumbled
- 1 cup Greek yogurt
- 1 tablespoon Dill
- 1 tablespoon Oregano
- Pita bread, for serving
Instructions
- Marinate the chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
- Grill or cook the chicken in a skillet until fully cooked, then slice.
- Prepare the tzatziki sauce by mixing Greek yogurt, diced cucumber, minced garlic, dill, and oregano in a bowl.
- Assemble the bowls with a base of rice or quinoa, topped with sliced chicken, fresh veggies (tomato, red onion), feta cheese, and tzatziki sauce.
- Serve with pita bread on the side.
