Description

Nutritious and flavorful Greek chicken bowls combine marinated chicken, fresh produce, and creamy tzatziki for a delightful culinary experience.


Ingredients

  • 2 Chicken breasts
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • Juice of 1 Lemon
  • Salt, to taste
  • Black Pepper, to taste
  • 1 Cucumber, diced
  • 2 Tomatoes, diced
  • 1 Red onion, sliced
  • 1/2 cup Feta cheese, crumbled
  • 1 cup Greek yogurt
  • 1 tablespoon Dill
  • 1 tablespoon Oregano
  • Pita bread, for serving


Instructions

  1. Marinate the chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill or cook the chicken in a skillet until fully cooked, then slice.
  3. Prepare the tzatziki sauce by mixing Greek yogurt, diced cucumber, minced garlic, dill, and oregano in a bowl.
  4. Assemble the bowls with a base of rice or quinoa, topped with sliced chicken, fresh veggies (tomato, red onion), feta cheese, and tzatziki sauce.
  5. Serve with pita bread on the side.

Notes

For best results, let the chicken rest after cooking to keep it tender. Experiment with different grains as a base for added variety.
