Ingredients

  • 1 lb (454 g) Ground Beef
  • 1 1/2 cups (355 ml) Beef Stock
  • 1 can Diced Tomatoes with Basil, Garlic & Oregano
  • 1 Whole Green Bell Pepper, diced
  • 2 Large Potatoes, diced
  • 1 Medium Onion, Chopped
  • 1 pack Frozen Mixed Vegetables
  • 1 pack Frozen Okra
  • 1 whole Jalapeno, deseeded and sliced
  • 1 tbsp Beef Seasoning (Knorr)
  • 1 tbsp Black Pepper
  • 1 tbsp Dried Parsley
  • 1 cup (237 ml) Water
  • 1 tbsp Garlic Powder
  • 1 tsp Minced Garlic
  • 1 pack Birds Eye Steamfresh Mixed Vegetables
  • 1 tbsp Tomato Paste


Instructions

  1. Collect all necessary items.
  2. Place a skillet on medium flame and introduce the minced beef. Add half of the onion, chopped, then season with black pepper, dried parsley, and beef seasoning.
  3. Combine thoroughly and let it cook for 5 to 7 minutes until the beef turns brown.
  4. Incorporate the canned diced tomatoes and tomato paste into the beef mixture.
  5. Add the frozen okra and mixed vegetables to the pan.
  6. Pour in 1 1/2 cups of beef stock into the beef and vegetable blend.
  7. With a sharp blade, peel and slice the remaining half of the onion. Also, remove the seeds and dice the green bell pepper and jalapeño.
  8. Introduce the green bell pepper, sliced onion, and jalapeño to the pot. Place a lid on the pot and lower the heat. Allow it to simmer for 10 minutes.
  9. Remove the cover, pour in a cup of water, and mix.
  10. Add the diced potatoes to the concoction.
  11. Blend everything together. Place the lid back on and let it cook on medium-low heat for 1 hour and 30 minutes or until the potatoes and other vegetables are soft.
  12. Once the vegetables have softened, serve this rich soup alongside freshly baked bread. Savor the meal!
