Description

Delightful spherical pancakes, known as aebleskiver, perfect for breakfast or snacks, bringing warmth and tradition to your gatherings.


Ingredients

  • 3 eggs, separated
  • 2 cups milk (or cream)
  • 2 cups flour
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup butter, melted
  • Cooking oil (liquid or spray) for greasing the pan


Instructions

  1. Heat your aebleskiver pan over medium heat.
  2. Beat the egg whites until stiff and fluffy.
  3. In a large bowl, combine flour, milk, sugar, salt, baking soda, and melted butter and mix well.
  4. Lightly fold in the beaten egg whites right before cooking.
  5. Lightly coat each cup in the pan with cooking oil.
  6. Fill each cup about two-thirds full with the batter.
  7. As the edges brown, turn the ball quarter-turn using a fork or skewer.
  8. After turning three times, remove the aebleskiver once they are beautifully browned and serve warm.

Notes

For added flavor, you can incorporate melted chocolate, fruit pieces, or spices like nutmeg and vanilla into the batter.
