Ingredients
- 680g sirloin steak (2 thick cuts)
- 1 tbsp olive oil
- Salt + pepper to taste
- 2 tsp mesquite seasoning (optional)
- 115g softened butter
- 1 tsp minced garlic
- ½ tsp garlic powder
- 1 tbsp chopped parsley
- 2 tsp thyme
- Optional: a pinch of rosemary or lemon zest
Instructions
- Mix minced garlic, garlic powder, chopped parsley, and thyme to create garlic herb butter. Chill until ready to use.
- Allow steaks to sit at room temperature for about 30 minutes.
- Pat the steaks dry to ensure a proper sear.
- Rub a tablespoon of olive oil evenly over both steaks.
- Season steaks heavily with salt, pepper, and mesquite seasoning.
- Heat a cast-iron skillet until it begins to smoke.
- Sear the steaks for 2 minutes without moving them.
- After two minutes, flip the steaks, add the garlic herb butter, and baste continuously for another 1-2 minutes.
- Check doneness: cook to 50°C (120°F) for rare, 55°C (130°F) for medium-rare, or 60°C (140°F) for medium.
- Let steaks rest for 5-7 minutes, topping them with additional butter during this time.
