Description

Craft your own pasta from scratch for a delightful culinary experience that connects family traditions. This recipe showcases how simple ingredients create amazing flavors.


Ingredients

  • 2 cups (240g) all-purpose flour, spooned & leveled
  • 3 large eggs
  • ½ teaspoon sea salt
  • ½ tablespoon extra-virgin olive oil


Instructions

  1. Pile the flour on a clean surface and make a well in the center.
  2. Add the eggs, olive oil, and sea salt into the well.
  3. Using a fork, slowly incorporate the flour into the eggs, ensuring the mixture stays within the well.
  4. Once it starts to come together, mix with your hands until you form a shaggy dough.
  5. Knead the dough for 8–10 minutes until it feels smooth and elastic.
  6. If the dough is too dry, add a few drops of water; if it’s sticky, dust with flour.
  7. Shape the dough into a ball, wrap it in plastic wrap, and let it rest for 30 minutes at room temperature.
  8. After resting, cut the dough into four equal pieces.
  9. Flatten one piece into a small oval shape.
  10. Pass the flattened dough through a pasta machine, starting with setting one three times.
  11. Fold the dough into thirds and run it again through settings two and three three times each, continuing through settings four, five, and six.
  12. Lay the finished sheets on a floured baking sheet, dust with flour, and fold lightly. Repeat with the remaining dough.
  13. Use a cutter to shape the pasta as desired, like fettuccine.
  14. Finally, boil in salted water for 1–2 minutes until al dente, drain, and enjoy!

Notes

Flouring surfaces helps avoid sticky dough. Experiment with the thickness for desired texture.
