Description

A comforting roasted tomato soup with sweet, caramelized tomatoes and aromatic herbs, perfect for chilly days.


Ingredients

  • 4 cups fresh ripe tomatoes, halved
  • 1 bulb garlic, unpeeled
  • 3 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup fresh basil or thyme leaves
  • 1/2 cup heavy cream


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the halved tomatoes and unpeeled garlic on a baking sheet, cut side up.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Roast for 30-40 minutes until tomatoes are caramelized.
  5. Let cool slightly before squeezing the garlic out of its skin.
  6. Combine roasted tomatoes and garlic in a blender; blend until smooth.
  7. Add fresh herbs and cream; adjust seasoning to taste.
  8. Serve hot, garnished with fresh herbs and a drizzle of olive oil.

Notes

For added flavor, consider mixing in roasted red peppers or a dash of hot sauce. Serve with crusty bread for a perfect pairing.
