Description
A comforting roasted tomato soup with sweet, caramelized tomatoes and aromatic herbs, perfect for chilly days.
Ingredients
- 4 cups fresh ripe tomatoes, halved
- 1 bulb garlic, unpeeled
- 3 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- 1/2 cup fresh basil or thyme leaves
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 400°F (200°C).
- Place the halved tomatoes and unpeeled garlic on a baking sheet, cut side up.
- Drizzle with olive oil and season with salt and pepper.
- Roast for 30-40 minutes until tomatoes are caramelized.
- Let cool slightly before squeezing the garlic out of its skin.
- Combine roasted tomatoes and garlic in a blender; blend until smooth.
- Add fresh herbs and cream; adjust seasoning to taste.
- Serve hot, garnished with fresh herbs and a drizzle of olive oil.
Notes
For added flavor, consider mixing in roasted red peppers or a dash of hot sauce. Serve with crusty bread for a perfect pairing.
