A smooth and satisfying cream of broccoli soup that transforms comfort food into a gourmet experience.
Ingredients
- 70g unsalted butter (divided)
- 172g sweet onion, chopped
- 3 cloves of garlic, minced
- 720ml chicken broth
- 575g fresh broccoli florets
- ¾ tsp kosher salt
- ½ tsp ground black pepper
- 3 tbsp all-purpose flour
- 480ml half-and-half
Instructions
- Melt 2 tablespoons of unsalted butter in a pot over medium heat. Add the chopped onion and minced garlic; cook for about three minutes until soft and fragrant.
- Pour in the chicken broth, fresh broccoli florets, kosher salt, and black pepper. Simmer for about 5-6 minutes until broccoli is tender.
- Blend the soup in batches until smooth, then return it to the pot.
- In a separate pan, melt the remaining butter and whisk in the all-purpose flour for one minute. Gradually add the half-and-half, whisking continuously until thickened.
- Combine the cream mixture with the blended soup. Stir thoroughly, taste, and adjust seasoning as needed. Serve hot.
Notes
For additional flavor, consider adding crispy toppings such as croutons or toasted nuts. Fresh herbs can enhance the presentation.
