Ingredients
- 6 tbsp caster sugar (90 ml)
- Pinch of ground cinnamon
- Seeds from 1 vanilla pod
- 6 apples (3 grated, 3 chopped)
- 3 tbsp dried cranberries (45 ml)
- Zest of 1 lemon
- Juice of 1/2 lemon
- 100g plain flour (2/3 cup)
- 2 tbsp brown sugar (30 ml)
- 50g beef suet, chilled and cubed
- Pinch of ground cinnamon
- 4 tbsp nutty granola or muesli (60 ml)
Instructions
- Set your oven to 200°C (400°F). In a flameproof dish on medium heat, melt the caster sugar until it turns a golden color.
- Mix in the cinnamon, vanilla seeds, and grated apples. Let it cook for about 1-2 minutes.
- Add in the chopped apples, dried cranberries, lemon zest, and lemon juice. Take the dish off the heat.
- Prepare the crumble topping: Combine the flour, brown sugar, and beef suet with a bit of cinnamon until it has the texture of breadcrumbs. Mix in the nutty granola or muesli.
- Put it all together: Sprinkle the crumble topping over the fruit mixture. Return the dish to the hob until the edges start to bubble.
- Move the dish to the oven and bake for 12-14 minutes until the top is golden and crisp. Serve while warm.
