Ingredients

  • 1 pound (454 g) Jumbo Shrimp, shelled and deveined
  • 2 tablespoon (30 ml) s Olive Oil, divided
  • 2 Garlic Cloves, minced
  • 1 teaspoon (5 ml) Minced Fresh Ginger
  • 1/2 teaspoon (3 ml) Chili Flakes, or to taste
  • 1 Yellow Bell Pepper, thinly sliced
  • 2 Carrots, spiralized
  • 2 large Zucchini, spiralized
  • 1 tablespoon (15 ml) Sesame seeds, to garnish
  • 1 large White Onion, sliced
  • Sea salt and freshly ground black pepper, to taste
  • 1/2 Cup (120 ml) Chicken or Vegetable Broth
  • 1/4 Cup (60 ml) Hoisin Sauce
  • 2 tablespoon (30 ml) s Low sodium soy sauce, or coconut aminos
  • 2 teaspoon (10 ml) s Cornstarch


Instructions

  1. In a small bowl, mix the sauce components until thoroughly blended and set it aside.
  2. Warm up 2 tablespoons of olive oil in a large pan or wok on medium heat. Add the minced garlic, fresh ginger, and chili flakes, stirring constantly for about 2 minutes.
  3. Introduce the shrimp to the pan and continue stirring until they turn pink and are cooked through, approximately 3 minutes.
  4. Sprinkle sea salt and freshly ground black pepper over the shrimp, then transfer them to a plate. Pour the remaining tablespoon of olive oil into the pan and add the sliced yellow bell pepper, spiralized carrots, and sliced white onion.
  5. Continuously stir the vegetables for 3 to 4 minutes until they reach a tender yet crisp texture.
  6. Pour the Asian sauce mixture into the pan, cooking for another 2 minutes until it thickens.
  7. Incorporate the spiralized zucchini and cooked shrimp into the pan, stirring everything together to combine well.
  8. Sprinkle sesame seeds on top as a garnish and serve promptly. Enjoy!
