Ingredients
- – 4 medium zucchini (about 500g)
- – 1.5 lb (680g) approx 30 raw shrimp, peeled and deveined
- – 2 tbsp (30ml) olive oil
- – 4 garlic cloves, finely chopped
- – 2 tbsp (30ml) vegetable oil
- – 1 lemon, juice and zest
- – 1/4 cup (60ml) apple juice or vegetable broth
- – 1/4 cup (60ml) chopped parsley
- – pinch of red pepper flakes
- – salt and pepper, to taste
Instructions
- Trim the ends off the zucchini and create noodles using a spiralizer. Set these aside for later.
- In a large skillet, warm the olive oil over medium-high heat. Arrange the shrimp in a single layer, seasoning with salt and pepper. Allow them to cook undisturbed for about a minute to get a slight crust on the bottom.
- Incorporate the minced garlic, then gently stir the shrimp for an additional minute or two to cook the other side. Transfer the shrimp to a plate using a large spoon or tongs.
- Introduce vegetable oil, lemon juice and zest, red pepper flakes, and apple juice or vegetable broth to the skillet. Let it simmer for 2-3 minutes, stirring occasionally.
- Mix in the chopped parsley, then add the zucchini noodles, tossing them for about 30 seconds to heat through. Return the shrimp to the skillet and stir for another minute. Serve right away.
