Ingredients
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken or vegetable broth
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 2 tablespoons chopped fresh parsley (optional for garnish)
Instructions
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, taking care not to burn it.
- Add the rice to the saucepan and stir continuously for 1 to 2 minutes to lightly toast the grains.
- Pour in the chicken or vegetable broth, then add the salt and black pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15 to 18 minutes, or until the rice is tender and the liquid has been absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork, then stir in the unsalted butter and grated Parmesan until melted and creamy.
- Sprinkle with fresh parsley, if desired, and serve warm.
