Description

Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped fresh parsley (optional for garnish)


Instructions

  1. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, taking care not to burn it.
  2. Add the rice to the saucepan and stir continuously for 1 to 2 minutes to lightly toast the grains.
  3. Pour in the chicken or vegetable broth, then add the salt and black pepper. Stir to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15 to 18 minutes, or until the rice is tender and the liquid has been absorbed.
  5. Remove from heat and let it sit covered for 5 minutes.
  6. Fluff the rice with a fork, then stir in the unsalted butter and grated Parmesan until melted and creamy.
  7. Sprinkle with fresh parsley, if desired, and serve warm.
