Description

A comforting and flavorful dish featuring tender chicken breasts, creamy parmesan cheese, and baby potatoes, cooked effortlessly in a crockpot.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)


Instructions

  1. Wash and halve the baby potatoes.
  2. Rub the chicken breasts with olive oil and season with Italian seasoning, salt, black pepper, and red pepper flakes.
  3. Layer the halved potatoes in the bottom of the crockpot.
  4. Place the seasoned chicken breasts on top of the potatoes.
  5. Pour the chicken broth over the ingredients.
  6. Sprinkle the minced garlic and parmesan cheese on top.
  7. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and cooked through.
  8. Remove from the crockpot and garnish with parsley before serving.

Notes

For added flavor, consider marinating the chicken before cooking. Freshly grated parmesan cheese enhances the creaminess of the dish.
