A comforting and flavorful dish featuring tender chicken breasts, creamy parmesan cheese, and baby potatoes, cooked effortlessly in a crockpot.
Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Wash and halve the baby potatoes.
- Rub the chicken breasts with olive oil and season with Italian seasoning, salt, black pepper, and red pepper flakes.
- Layer the halved potatoes in the bottom of the crockpot.
- Place the seasoned chicken breasts on top of the potatoes.
- Pour the chicken broth over the ingredients.
- Sprinkle the minced garlic and parmesan cheese on top.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and cooked through.
- Remove from the crockpot and garnish with parsley before serving.
Notes
For added flavor, consider marinating the chicken before cooking. Freshly grated parmesan cheese enhances the creaminess of the dish.
