A comforting dish that combines tender chicken breasts with a rich garlic Parmesan sauce, served over creamy, cheesy mashed potatoes.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 potatoes, peeled and diced
- 1 cup shredded cheese (e.g., Cheddar or Mozzarella)
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning. Cook until golden brown on both sides, about 5-6 minutes per side.
- In a bowl, mix together heavy cream, Parmesan cheese, and minced garlic. Pour over the chicken in the skillet.
- In a separate pot, boil diced potatoes until tender, then drain and mash. Mix in shredded cheese until melted.
- Layer the cheesy potatoes in a baking dish, placing the chicken on top. Pour any remaining sauce over everything.
- Bake in the oven for 25-30 minutes until chicken is cooked through and sauce is bubbly.
- Garnish with fresh parsley before serving.
Notes
For a little extra warmth, consider adding crushed red pepper flakes to the sauce. You can also customize the cheese by swapping Parmesan for a different variety like Gruyère.
