Description

A comforting dish that combines tender chicken breasts with a rich garlic Parmesan sauce, served over creamy, cheesy mashed potatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 potatoes, peeled and diced
  • 1 cup shredded cheese (e.g., Cheddar or Mozzarella)
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning. Cook until golden brown on both sides, about 5-6 minutes per side.
  3. In a bowl, mix together heavy cream, Parmesan cheese, and minced garlic. Pour over the chicken in the skillet.
  4. In a separate pot, boil diced potatoes until tender, then drain and mash. Mix in shredded cheese until melted.
  5. Layer the cheesy potatoes in a baking dish, placing the chicken on top. Pour any remaining sauce over everything.
  6. Bake in the oven for 25-30 minutes until chicken is cooked through and sauce is bubbly.

Notes

For a little extra warmth, consider adding crushed red pepper flakes to the sauce. You can also customize the cheese by swapping Parmesan for a different variety like Gruyère.
