Ingredients

  • 400g mushrooms (14 oz), thickly sliced
  • 2 tbsp olive oil
  • 1 medium onion, finely diced
  • 2 garlic cloves, finely chopped
  • 1/2 tsp chili flakes
  • 60g sun-dried tomatoes (2 oz), roughly chopped
  • 1 tbsp dried Italian herbs
  • 1 tbsp balsamic vinegar
  • 50g baby spinach (1.75 oz)
  • 2 tbsp fresh parsley
  • Sea salt & black pepper


Instructions

  1. In a spacious skillet, warm up 2 tablespoons of olive oil. Introduce the mushrooms and allow them to cook undisturbed for 5-7 minutes. Give them a stir and continue cooking for another 5 minutes.
  2. Incorporate the onion and let it cook for 5 minutes until it becomes translucent.
  3. Add the garlic and chili flakes and sauté for another 2-3 minutes until they release their aroma.
  4. Introduce the chopped sun-dried tomatoes and dried Italian herbs, ensuring everything is well combined.
  5. Pour in the balsamic vinegar to deglaze the skillet and let it evaporate for 1-2 minutes.
  6. Add the baby spinach and cook it briefly until it mostly wilts. Finish by sprinkling fresh parsley on top.
  7. Serve alongside polenta, potato gnocchi, or mashed potatoes as a vegetarian main course or pair as a side dish with beef.
