Ingredients
- 400g mushrooms (14 oz), thickly sliced
- 2 tbsp olive oil
- 1 medium onion, finely diced
- 2 garlic cloves, finely chopped
- 1/2 tsp chili flakes
- 60g sun-dried tomatoes (2 oz), roughly chopped
- 1 tbsp dried Italian herbs
- 1 tbsp balsamic vinegar
- 50g baby spinach (1.75 oz)
- 2 tbsp fresh parsley
- Sea salt & black pepper
Instructions
- In a spacious skillet, warm up 2 tablespoons of olive oil. Introduce the mushrooms and allow them to cook undisturbed for 5-7 minutes. Give them a stir and continue cooking for another 5 minutes.
- Incorporate the onion and let it cook for 5 minutes until it becomes translucent.
- Add the garlic and chili flakes and sauté for another 2-3 minutes until they release their aroma.
- Introduce the chopped sun-dried tomatoes and dried Italian herbs, ensuring everything is well combined.
- Pour in the balsamic vinegar to deglaze the skillet and let it evaporate for 1-2 minutes.
- Add the baby spinach and cook it briefly until it mostly wilts. Finish by sprinkling fresh parsley on top.
- Serve alongside polenta, potato gnocchi, or mashed potatoes as a vegetarian main course or pair as a side dish with beef.
