Ingredients

  • – 12 ounces (340 g) dried spaghetti or other long, thin pasta
  • – 3 tablespoons (45 ml) olive oil
  • – 2 tablespoons (30 ml) vegetable oil
  • – 5 large garlic cloves, minced
  • – 1/4 teaspoon (1 ml) crushed red pepper flakes or more
  • – 1 pound (450 g) medium shrimp, peeled and deveined
  • – 1 large lemon, juice and zest
  • – 1/4 cup (60 ml) chopped fresh parsley or more
  • – kosher salt and freshly ground black pepper to taste
  • – 2 ounces (60 g) Parmesan cheese, freshly grated, optional


Instructions

  1. Fill a large pot with water, add a pinch of salt, and bring it to a boil. Cook the pasta in the boiling water until it is tender yet firm, approximately 8 minutes. Drain and keep aside 1 cup of the pasta water.
  2. In the meantime, warm the olive oil and vegetable oil in a big frying pan over medium-high heat until it begins to sizzle. Add the minced garlic and crushed red pepper flakes; sauté while stirring until the aroma is released, roughly 30 seconds. Introduce the shrimp and continue to stir and cook until the shrimp are thoroughly done, about 3 to 4 minutes. Take off the heat.
  3. After draining the pasta, return the skillet with the shrimp mixture to medium heat. Combine the drained pasta with 1/4 cup of the reserved pasta cooking water, tossing until evenly coated. Stir and cook until everything is warmed through, adding more pasta water if the mixture seems too dry.
  4. Remove the skillet from heat, then mix in the fresh lemon juice, lemon zest, and chopped parsley. Adjust seasoning with salt and pepper according to taste. Serve by transferring to a serving dish or platter and, if desired, sprinkle with freshly grated Parmesan cheese before serving.
