Ingredients

  • – 1 whole chicken (about 1.5 kg)
  • – 3 tablespoons (45 ml) vegetable oil, melted
  • – 1 teaspoon (5 ml) salt
  • – 1/2 teaspoon (3 ml) black pepper
  • – 1 bunch thyme + 1 tablespoon (15 ml) fresh thyme
  • – 1 head garlic, sliced in half horizontally
  • – 1/2 onion
  • – Lemon slices for serving


Instructions

  1. Set your oven to a temperature of 400°F.
  2. Dry the chicken using a paper towel, remove the internal organs, tuck the wings beneath the breast, and secure the legs with kitchen string.
  3. In a small dish, mix the vegetable oil, salt, pepper, and fresh thyme. Massage this mixture all over the chicken, ensuring it also goes beneath the skin.
  4. Place the halved garlic, onion, and thyme bunch inside the chicken’s cavity.
  5. Put the chicken in a large roasting pan with the breast facing upwards and cook it in the oven until the skin turns golden and a thermometer inserted into the chicken shows 165°F, which should take about 60-75 minutes.
  6. Baste the chicken with the juices from the pan and let it sit for 15 minutes before slicing.
