Ingredients
- – 1 whole chicken (about 1.5 kg)
- – 3 tablespoons (45 ml) vegetable oil, melted
- – 1 teaspoon (5 ml) salt
- – 1/2 teaspoon (3 ml) black pepper
- – 1 bunch thyme + 1 tablespoon (15 ml) fresh thyme
- – 1 head garlic, sliced in half horizontally
- – 1/2 onion
- – Lemon slices for serving
Instructions
- Set your oven to a temperature of 400°F.
- Dry the chicken using a paper towel, remove the internal organs, tuck the wings beneath the breast, and secure the legs with kitchen string.
- In a small dish, mix the vegetable oil, salt, pepper, and fresh thyme. Massage this mixture all over the chicken, ensuring it also goes beneath the skin.
- Place the halved garlic, onion, and thyme bunch inside the chicken’s cavity.
- Put the chicken in a large roasting pan with the breast facing upwards and cook it in the oven until the skin turns golden and a thermometer inserted into the chicken shows 165°F, which should take about 60-75 minutes.
- Baste the chicken with the juices from the pan and let it sit for 15 minutes before slicing.
