Ingredients

  • – 6 boneless skinless chicken thighs (900g)
  • – 1/2 tsp paprika (2.5 ml)
  • – 1/4 tsp salt (1.25 ml)
  • – 1/2 tsp pepper (2.5 ml)
  • – 1 tbsp olive oil (15 ml)
  • – 1 1/2 tbsp vegetable oil (22.5 ml)
  • – 4 cloves garlic, minced
  • – 2/3 cup chicken stock (160 ml)
  • – 1 1/2 tbsp apple cider vinegar (22.5 ml)
  • – 1 tbsp (15 ml) chopped fresh parsley
  • – 2 tsp chopped fresh oregano (10 g)
  • – 2 tsp chopped fresh thyme (10 g)


Instructions

  1. Arrange the chicken thighs on a dish and evenly coat both sides with paprika, salt, and pepper.
  2. Warm the olive oil in a frying pan over medium heat. Once the oil is hot, place the chicken thighs in and cook for 5 minutes until they develop a golden crust. Turn the chicken over and continue cooking for 2 more minutes on the opposite side, then take them out and set them aside.
  3. Introduce the vegetable oil to the pan along with the minced garlic, cooking for 20 seconds until the aroma is released, then pour in the chicken stock and apple cider vinegar. Use a wooden spoon to scrape up any browned bits from the bottom of the pan.
  4. Allow the mixture to simmer for 2 minutes before stirring in the parsley, oregano, and thyme. Mix it well and then return the browned chicken thighs to the pan. Let the sauce simmer for an additional 3 minutes until it starts to thicken. Finish by serving with extra parsley as a garnish.
