Description

A heartwarming Garlic Chickpea Soup filled with the comforting aromas of garlic, spices, and chickpeas, perfect for chilly evenings.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic; sauté until the onion turns translucent.
  3. Stir in cumin and smoked paprika; cook for another minute.
  4. Add drained chickpeas and vegetable broth; bring to a boil.
  5. Reduce heat and simmer for about 15 minutes.
  6. Use an immersion blender to puree the soup to your desired texture.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with fresh parsley if desired.

Notes

For a thicker soup, add more chickpeas or reduce the broth slightly during cooking. Squeeze a bit of lemon juice before serving for added brightness.
