Ingredients
- 1 can chickpeas, drained and rinsed
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic; sauté until the onion turns translucent.
- Stir in cumin and smoked paprika; cook for another minute.
- Add drained chickpeas and vegetable broth; bring to a boil.
- Reduce heat and simmer for about 15 minutes.
- Use an immersion blender to puree the soup to your desired texture.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley if desired.
Notes
For a thicker soup, add more chickpeas or reduce the broth slightly during cooking. Squeeze a bit of lemon juice before serving for added brightness.
