Ingredients

  • – 1 cup (240 ml) unsalted butter melted and cooled
  • – 2 tablespoons (30 ml) vegetable oil
  • – 1 1/4 cups (300 g) white sugar
  • – 1 cup (200 g) light brown sugar packed
  • – 4 eggs large, at room temperature
  • – 1 tablespoon (15 ml) pure vanilla extract
  • – 3/4 teaspoon (4 ml) salt
  • – 1 cup (120 g) all-purpose flour
  • – 1 cup (85 g) unsweetened cocoa powder good quality
  • – 7 oz (200 g) large chocolate chips or roughly chopped chocolate


Instructions

  1. Set your oven to 175°C (350°F) to preheat.
  2. Use a spray of cooking oil to lightly coat an 8×12-inch baking dish, and then line it with parchment paper; set it aside.
  3. In a medium bowl, blend the melted butter, vegetable oil, and both sugars thoroughly using a whisk.
  4. Incorporate the eggs and vanilla extract, beating the mixture until it lightens in color, which should take about a minute.
  5. Sift the flour, cocoa powder, and salt into the bowl. Carefully fold these dry components into the wet mixture, ensuring not to over-mix to preserve the brownies’ texture.
  6. Gently mix in 3/4 of the chocolate pieces.
  7. Transfer the batter into the prepared baking dish, spreading it evenly, and sprinkle the remaining chocolate pieces on top.
  8. Bake for 25-30 minutes for a fudgy consistency or until the center is just set. For a firmer result, bake for 35-40 minutes. Remember, the brownies will continue to cook in the hot pan after being removed from the oven. A toothpick inserted should come out with moist crumbs for a fudgy texture.
  9. Allow to cool in the pan for 15-20 minutes, then carefully take them out and let them cool to room temperature before cutting them into 16 pieces. They will firm up as they cool.
  10. Store them at room temperature for up to 3 days or in the fridge for up to 5 days. They can be frozen for up to 3 months; let them thaw overnight in the fridge, then bring to room temperature before serving or warm them up in the microwave.
