Delicious Polish sauerkraut pancakes that are crispy on the outside and fluffy on the inside, perfect as a snack or side dish.
Ingredients
- 1 cup sauerkraut, drained and chopped
- 1 cup all-purpose flour
- 1 large egg
- 1/2 cup milk
- 1/2 teaspoon baking powder
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Combine the sauerkraut, flour, egg, milk, baking powder, salt, and pepper in a large bowl until well mixed.
- Heat a skillet over medium heat and add vegetable oil.
- Drop spoonfuls of the batter into the skillet and flatten slightly.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove and drain on paper towels.
- Serve warm as a side dish or snack.
Notes
Adjust the sauerkraut amount for different levels of tanginess. Consider adding herbs or spices for extra flavor.
