Description

A modern twist on the classic s’mores, these Frozen S’more Bars are layered with chocolate pudding, marshmallow cream, and graham crackers for a refreshing dessert.


Ingredients

  • 2 (2.1 oz.) packages sugar-free instant chocolate pudding mix
  • 4 cups cold unsweetened almond milk
  • 8 ounces fat-free Cool Whip
  • 7 ounces marshmallow crème
  • 4 ounces reduced-fat Neufchâtel cream cheese
  • 15 graham crackers, halved


Instructions

  1. Line a 13×9” baking dish with foil and set it aside.
  2. Prepare the pudding per package directions using the cold almond milk.
  3. Pour the pudding mixture into the prepared baking dish and place it in the freezer to chill.
  4. Beat together the Cool Whip, marshmallow crème, and cream cheese until smooth.
  5. Spread the marshmallow mixture evenly on top of the chocolate layer.
  6. Cover and place it back in the freezer for at least 360 minutes to set.
  7. Remove from the freezer, lift out the dessert using the foil.
  8. Line with half of the graham crackers, slice around the crackers, and trim the edges.
  9. Flip and line the bottoms with the remaining graham crackers.
  10. Enjoy immediately or store in the freezer for later!

Notes

For best results, freeze the bars overnight for a firmer texture. Use a sharp knife dipped in hot water to cut for cleaner edges.
