Ingredients
- Vegetable oil or coconut oil
- 4 medium-size apples (Such as Granny Smith, Gala, Golden Delicious)
- 1/2 cup (120g) sugar plus 2 tablespoons divided
- 1 teaspoon (5 ml) ground cinnamon plus 1/4 teaspoon (1 ml) divided
- 1 large egg
- 1/2 teaspoon (3 ml) vanilla optional-but I always opt in
- 3/4 cup (180ml) 2% or whole milk
- 1 cup (125g) all-purpose flour plus 2 tablespoons
- 1 1/2 teaspoons (8 ml) baking powder
- 1/2 teaspoon (3 ml) salt
Instructions
- Pour vegetable oil or coconut oil into a large cast iron skillet or a sturdy pot until it reaches a depth of at least one inch. Warm the oil to 365°F on medium-high heat. If using a pot, less oil can be used to achieve the one-inch depth, but you will fry fewer rings at once.
- Meanwhile, slice the apples into ¼-inch thick rounds. Use a small round cookie cutter to remove the core, leaving approximately ⅜-inch of apple intact. You can also use a knife or apple corer to do this. Discard the seeds and core, but keep the apple centers for a snack or salad later.
- In a small bowl, blend ½ cup sugar with 1 teaspoon of cinnamon to create a cinnamon-sugar mix for coating the apple rings.
- In a medium-sized bowl, lightly whisk the egg and gradually incorporate the milk. Add the flour, then sprinkle in 2 tablespoons of sugar, the baking powder, and salt. Lightly mix the dry components on top of the milk, then fully combine everything together. This method saves you from using an extra bowl to mix the dry ingredients separately.
- Check if the oil has reached 365°F using a digital thermometer if you have one. With tongs, dip the apple rings into the batter, letting any excess drip back into the bowl. Fry three or four rings at a time for 1 to 2 minutes, or until they turn golden brown. Allow them to drain on paper towels for 1 minute; then, while still warm, coat them in the cinnamon-sugar mixture using tongs to ensure even coverage. Enjoy them warm, and any leftovers can be reheated in the microwave for breakfast the next day.
